HAPPY THANKSGIVING !!!!!!!!!!!!!!!
I called my Mom this morning to wish her a happy one, and she said my Aunt and Cousin were coming over to her house to have some fried chicken, lima beans, shell salad and this jello salad but Brad and I decided to do our own healthy Thanksgiving!
Brad got a shower then we all headed out to Wal-Mart to get our food. We bought a smaller portion Butterball Turkey Breast, fresh green beans, a yellow squash, and stuff to make my healthy HOMEMADE crustless chocolate pumpkin pie! WOOT. Of course Wal-Mart was getting ready to start the Black Friday sales for tonight so stuff was everywhere. We came home and watched the Biggest Loser: Thanksgiving Special and I would stop and go cook a little. Turkey was in the oven! About 6:15pm I started the sides… boiled my eggs so I could make deviled eggs + cut up my squash and prepped the fresh green beans. Got the eggs all ready and put in the fridge to cool off. I put some olive oil in with the green beans & squash then Brad had the idea to squeeze fresh lemon juice into it. Turned out to be AMAZING!!!!!!!! The turkey was moist, the eggs were a little too mustard-ish (but good!), and the sauteed green bean/squash was DELISH.
I’m eating the rest of my pie at the moment and it turned out pretty good, except I put too much cocoa powder into it, but otherwise YUM! The WHOLE pie is only around ~270ish calories. Isn’t that EPIC? I got the recipe from one of the foodie bloggers I follow. In fact, I made the same thing (a little different) last October!
I think I’m actually lacking a bit in calories for today, but that’s fine considering I’ve been eating way too much for a long while now. I’m getting back on track calorie-wise and fitness wise! I ate lots of eggs today, lol since we didn’t have much else. I ate 2 protein bars this evening since we were out and about…. they were SO GOOD. I’m going for simple, delish foods.
I’m so glad we had our own Thanksgiving dinner! I’m thankful for so much. Thankful for my Heavenly Father. Thankful for life. Thankful for my handsome husband and our daughter. Thankful for our church. Thankful for our home and food. Thankful for another Thanksgiving……. hope you and your family have had a great one!
GOBBLE GOBBLE !!!!!!!!!!! I’m thankful we had a HEALTHY Thanksgiving! I wouldn’t want it any other way! ;D Especially with trying to get back to where I was AND I WILL DAMNIT, I WILL!!!!!!!!!! =)
I am sort of dieting, well making a lifestyle change and I am losing weight, but hey holidays are for eating. The chocolate pumpkin pie sounds so good, care to share? I am doing my thanksgiving late, tomorrow with my family and making green bean casserole, which I’ve never made before.
